Homemade Chicken Taquitos
These are so much better than the frozen taquitos you buy at the grocery store!!
Using fresh ingredients helps make them so much healthier too.
We make a good size batch and then freeze them. So great for those of you who food prep like us!

For this recipe, to make it a little more authentic, we used canola oil.
Any kind of oil of your preference will work, of course.
We bake our taquitos in the oven rather than frying them, but we need the oil to dip

Let's start with cooking the chicken.
This is a great recipe to use up leftovers with, which we do often.
But, if you have no leftover chicken to use, cook some chicken and then let it cool.
We baked chicken this time, so we did it with fresh herbs and some EVOO.
Once cooled, chop it finely and set it aside.

Now we prepare the mixture to fill the taquitos.
In a medium size bowl, add your finely chopped chicken, garlic, seasonings, jalapeno,

Mix it all together really well and set it aside.
Now it's time to prep the corn tortillas.

Using tinfoil, place your stack of corn tortillas in the center and then wrap them up.
Place the foil wrapped tortillas in the oven for about 10 minutes and they should be good to go.

Without using the foil, just put them on a death box safe plate and give them a zap.
Yes, yes, I (sylvie) have issues and call it the death box.
I am afraid of them, won't use them and ours sits unplugged.
Pull out your tortillas once warmed through and now it's time to get them filled.
Spoon about 2 Tbsp of filling into each tortilla and roll them tightly.
Dip your taquito into the canola oil and then place on an ungreased baking pan.

1 - 1/2 tsp cumin
2 Tbsp chili powder
1 tsp onion powder
1 tsp finely minced garlic
1 tsp finely minced jalapeno pepper

Our Homemade Applesauce ♥
Our Homemade Applesauce
Want to make your own applesauce?
We decided since we had the applesauce shown in our Frittata cups photo,
that we better get our applesauce recipe posted the same time.
We make ours with skins for texture, and literally only takes 20 minutes.
(That's for preparation AND cooking!)
sylvie has always hated the smooth texture of things, like apple sauce, yogurt and puddings.
Well did we find a solution for that..

Not to mention, making anything yourself cuts way back in no-no ingredients, so much healthier!!
(Now I'm an applesauce lover!)

We used 1 large Gala apple and 4 small McIntosh apples.
We chop ours in bigger chunks.
The apples will cook down so it will still be saucy no matter the size of the apple.
But, the skins do stay intact, so if you prefer smaller bites of skin, chop the apples smaller.
If you prefer no skin at all, you can peel the apples instead.
It may change the cooking time by a few minutes faster.
(this is the size of our apples)
Once your apples are chopped, toss them into your pot.
Now add your lime juice, water, brown sugar and cinnamon.
Give them a stir and on medium heat let them simmer down.
In 5 minutes the apple peels will begin pulling off.

(possibly sooner if you cut the apples in smaller chunks)
You will notice the apples are already starting to break down.
Continue to stir every couple of minutes, watching them closely.
They will reduce and thicken, and you'll know when they're finished.
15 minutes total of cooktime, no joke!
How easy is that ?
We pull out about 1/3 of the apple skins, as that's our personal preference.
You may choose to keep them, or pull them all out, totally up to you.
We personally love the texture with the skins.
Now let them cool, and store in the refrigerator. Stays good for 4-5 days!
That is why we don't make a super big batch, no waste that way.

Take the pot off the heat and let the applesauce cool down.
Storage
Refrigerate up to 4 or 5 days in a sealed container.
You can double the recipe easily.
